Midbasah

The midbasah is a traditional room used to store dates and naturally extract dibs, date syrup, from them. In the past it was built from gypsum and chandal, mangrove poles, while later construction used bricks and cement. Its smooth floor contains sloping channels for collecting the dibs. Dates are packed into yarab, containers made from date-palm fronds, and stacked on top of one another inside the midbasah. Pressure and the warmth of the room cause date juice to flow out through the channels into an earthenware vessel covered with cloth to filter impurities. The dibs is then collected and stored in designated containers. This is one of the oldest methods of extracting date syrup, combining date storage with utilization of the juice, and remains known for the distinctive quality and flavour it produces.
