الجدر

يُعدّ الجِدْر (القدر) من الأواني الأساسية المستخدمة في طهي الطعام وهو وعاء يُصنع من مواد تتحمّل الحرارة العالية مثل النحاس أو الفخار، كما دخل الألمنيوم إلى استخدامه في الفترات الحديثة. وقد تنوّعت أنواع القدور المستخدمة قديماً بحسب المادة المصنوعة منها وطبيعة الاستخدام. ومن أبرز هذه الأنواع القدر الفخاري، وهو من أقدم وأشهر القدور في الإمارات، وكان يُستخدم على نطاق واسع في النصف الأول من القرن العشرين وما قبله لطهي مختلف أنواع الطعام، ويُصنع محلياً في محارق الفخار. كما توجد البرمة وهي قدر فخاري يُستخدم للطهي أيضاً ويتميّز بتحمّله للحرارة. إضافة إلى ذلك، هناك الصُّفْرِيّة وهي قدر مصنوع من النحاس ويتوفر بأحجام مختلفة، ويُستخدم لتحضير كميات كبيرة من الطعام. وتعكس هذه الأدوات تنوع أساليب الطهي التقليدية في المجتمع الإماراتي القديم.

Geographical or Cultural Specificity: The element is characterized by its association with a specific geographic area or cultural group within the country, giving it a unique identity that distinguishes it from other practices. This element represents part of the social and cultural history of the community, enhancing its value as a distinctive component of local or national identity.

Preserving the Element within the Living Community Context: The element derives its value from being actively practiced in people’s daily lives or within their rituals and social occasions. Preserving the element does not mean freezing it in time, but rather supporting it to continue in its original environment, while respecting its natural evolution within the community context.
