الشّحم

الشحم، أو كما يُعرف محليًا بـ"الودك"، هو مادة دهنية تُستخرج من شحم الأغنام أو الماعز أو الإبل بعد ذبحها وتنظيفها، تُطهى على نار هادئة لفترة طويلة حتى تذوب الدهون وتنفصل عن الشوائب ويُضاف إليه الملح وبعض التوابل لزيادة فترة صلاحيته وليعطي نكهة خاصة لينتج دهنا يُستخدم في الطهي أو الحفظ أو التداوي. ويتم حفظه في أوعية فخارية أو معدنية . كان الشحم أحد المصادر الأساسية قبل ظهور الزيوت النباتية والسمن التجاري، خاصة في البيئات الصحراوية والجبلية التي تعتمد على تربية المواشي. بالإضافة إلى استخداماته الغذائية، كان للشحم دور مهم في الطب الشعبي، حيث يُستخدم كدهان خارجي لعلاج تشققات الجلد وآلام المفاصل، أو حتى لترطيب الجلد في الشتاء. ويُمارس تحضيره غالبًا من قبل النساء كبيرات السن ممن يحتفظن بالمعرفة الدقيقة لتفاصيل العملية، من حيث التوقيت، والحرارة، ومراحل التصفية. لا يزال الشحم يحتفظ بمكانته في بعض البيوت والمطاعم الشعبية، ويُعرض في المهرجانات والأسواق التراثية
